Melt the clarified butter in a small saucepan. Separate 4 yolks and put them in a bowl and place it in a bain-marie. Start whipping the yolks and add the white vinegar and salt while stirring, then whip the mixture by adding the melted clarified butter in a low stream. Continue whipping until you get a smooth and homogeneous sauce.

Bring the water to a boil, add a dash of white vinegar, and lower the heat to low. Proceed by creating a vortex in the water with a spoon and pour a previously opened egg into this centre. Let it cook for about 5 minutes over low heat without boiling. Remove it when it gets cooked.
