Directions
Preheat oven to 375°F.
Cook lasagna noodles according to package instructions. Drain and set aside.
While the noodles are cooking, heat olive oil in a large skillet over medium heat. Sauté garlic until fragrant, then add oregano, basil, and pepper. Add mushrooms and cook until tender, and add spinach and cook until wilted.
In a bowl, mix together ricotta cheese, Parmesan cheese, and half of the shredded mozzarella cheese.
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange lasagna of the sauce and spread half the cheese mixture over the noodles.
Add a layer of the mushroom and spinach mixture on top of the cheese, then sprinkle half of the remaining mozzarella cheese over the veggies.
Repeat the layers until all of the ingredients have been used, ending with a layer of marinara sauce and the remaining mozzarella cheese on top.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 20 minutes or until cheese is bubbly.
Let the lasagna cool for 10 minutes before serving.
