Simple Authentic Crispy Greek Potato Wedges

- 6 large potatoes, peeled and quartered
- 2 cloves of garlic, finely chopped
- 1⁄2 Cup of extra virgin olive oil
- 1 Cup of water
- juice from one lemon
- 1 tablespoon dried oregano
- Sea salt and pepper to taste
- Fresh parsley to garnish

Directions
Preheat your oven to 200 degrees Celsius.
Place the peeled and quartered potatoes in a large baking dish.
In a bowl, mix together the olive oil, water, lemon juice, chopped garlic, oregano, sea salt, and pepper.
Pour this mixture over the potatoes in the baking dish, ensuring they are well-coated.
Bake the potatoes in the preheated oven for 40 minutes.
After 40 minutes, take the dish out and turn the potatoes over. If the dish looks dry, add a little more water or olive oil.
Return the dish back to the oven and bake for another 40 minutes or until the potatoes are crisply golden and have absorbed most of the fluid.
Sprinkle with a bit of fresh parsley for garnish before serving.
