Ingredients
For the shortcrust pastry
- 200 g self-rising flour
- 100 g cold butter
- 50 g water
- 1 spoon salt
Filling
- 500 g cherry tomatoes
- 1 spoon oregano
- 2 tablespoon oil
- 1 clove garlic
- 3 tablespoon balsamic vinegar
- salt
- 11⁄2 tablespoon sugar

Mix flour, butter, cold water and salt, until you get a smooth and homogeneous ball of dough. Wrap it in cling film and leave it to rest in the fridge for an hour.

Put the oil in a pan with the oregano and the garlic clove. Then add the well-washed and halved cherry tomatoes. Cook for 5 minutes.

In another pan put the balsamic vinegar with the sugar and emulsify. Transfer the cherry tomatoes to the second pan and cook for another 5 minutes. Then, drain.
