Roasted Sweet Potato
This delicious roasted sweet potato recipe is a personal favorite. It takes about an hour but is totally worth it. The sweet potato becomes deliciously soft and sweet when roasted and is an excellent garnish for any main dish. Its sweet and earthy flavor perfectly complements the protein of your choice. Keep in mind that although the actual working time is quite low, the sweet potato needs quite a bit of time to roast perfectly, so plan ahead.

- 4 Medium sweet potatoes
- 4 cdas of olive oil

Pre-heat your oven to 180 degrees Celsius. Once hot, you will be able to insert your sweet potatoes. This step is essential to allow the heat to penetrate evenly through the sweet potato.
While the oven is preheating, wash the sweet potatoes thoroughly. As we are going to roast them with the skin on, it is very important to make sure they are very clean.
Dry the sweet potatoes with paper towels.
Make a few deep cuts in the sweet potatoes with a sharp knife. This step is crucial to allow the heat to penetrate to the center of the sweet potato.
Brush each sweet potato with a tablespoon of olive oil. Make sure they are well coated. The oil not only helps the skin get crispy, it also keeps the sweet potato moist while roasting.
Season the sweet potatoes with salt and pepper to taste.
Place the sweet potatoes on a baking sheet.
Bake the sweet potatoes for 1 hour, or until fork tender. You can check at 45 minutes to make sure they are not burning.
My experience tells me that roasting sweet potatoes can vary depending on the size of the piece. So it is always good to check the tenderness before taking them out of the oven. They can be served as is or you can give them your personal touch by adding your favorite spices or herbs before roasting, for example, with a little cinnamon or thyme.
