Roasted Asparagus and Prosciutto Wrapped Bundles

- 20 Stems of asparagus
- 10 slices of Prosciutto
- 1 tablespoon olive oil
- 2 teaspoon Lemon zest

Begin by preheating your oven to 400 degrees Fahrenheit. Place a baking sheet lined with parchment paper aside. This is a small, yet crucial step to ensure that the bundles are easy to flip and maintain their shape.
Wash the asparagus stalks and trim the ends. In my experience, it's best to cut about 2 inches off the bottom because this part can be a bit tough.
Then, take two asparagus stalks and wrap one slice of Prosciutto around them. Repeat this process until each stalk has been used. This is the fun part — make sure the wrapping is not too tight to allow the asparagus to steam while it's baking.
Arrange the wrapped Prosciutto and Asparagus bundles on the prepared baking sheet. Drizzle them with olive oil and sprinkle with salt, pepper, and lemon zest. The zest brings a refreshing balance to the salty prosciutto.
Bake for about 15 minutes, or until the asparagus is cooked but still crisp and the Prosciutto is slightly crispy. Once out of the oven, drizzle them with balsamic glaze. It adds a sweet tang that complements the savory bundles perfectly.
