Roast pork with baby potatoes
Recipe for fantastic roast pork with baby potatoes.
Ingredients
- 500 g pork
- 500 g baby potatoes
- 2 tablespoon olive oil
- Salt, freshly ground black pepper
- 3 cloves garlic
- 1 pcs carrot
- 2 twigs rosemary
- Fresh herbs for sprinkling (parsley, dill)

First of all, it is important to wash and dry the pork thoroughly. Salt and pepper it on both sides.
Wash the baby potatoes and boil in salted water for about 10 minutes. If you want, you can peel the potatoes, but I prefer the version with the skin. The potatoes are so crispy and have more flavor.
Add olive oil, grated carrots, garlic cloves and rosemary sprigs to the baking dish. Roast it all together over a medium heat.
Then add the meat and put it in a preheated oven at 180°C. After about 30 minutes, turn the meat over and add the pre-cooked baby potatoes to the baking dish.
Let the meat and potatoes bake for about 15 - 20 minutes more.
The finished pork and potatoes can be sprinkled with fresh herbs before serving and served with a delicious homemade dressing or tartar sauce.
