Quick cookie baking for those in a hurry in 30 minutes
I have always appreciated this simple recipe in times of great haste. It only requires a few ingredients that almost everyone has at home, and in just 30 minutes you can be enjoying delicious homemade cookies. With their crunchy texture and sweet flavor, they were always a hit for impromptu visits and sharing with friends and family.

- 125 g butter
- 125 g sugar
- 1 medium size egg
- 1 Packet vanilla sugar
- 250 g flour
- 1 Teaspoon baking soda

To bake the quick cookies, first preheat the oven to 180°C. It is important not to skip the oven as the even heat will ensure the cookies bake perfectly.
Mix the butter, sugar, egg and vanilla sugar in a bowl until creamy. I have found that soft butter gives a better result, so take it out of the fridge about half an hour before you start.
In another bowl, mix the flour and baking powder. This ensures a more even distribution of the baking powder in the dough, which is important for the cookies to rise.
Add the flour and baking powder mixture to the butter and sugar mixture and work into a smooth dough. Do not knead too much, otherwise the cookies will be hard.
Using a spoon, place small mounds of dough on a baking tray lined with baking paper and press flat. Make sure there is enough space between the cookies as they will rise during baking.
Bake the cookies for 10-15 minutes until they are golden brown. A good tip is to take them out a little earlier when they are still slightly soft, as they will become even harder as they cool.
Leave the cookies to cool on the baking tray before serving.
