Pork loin with Plum
Pork loin with plum, one of my favorite dishes for Sunday dinner. I have prepared it countless times and each time it comes out wonderfully juicy and flavorful.
Ingredients
- 1 kg pork tenderloin
- 20 pcs Dried plums
- 4 cloves garlic
- Salt, pepper
- Dried paprika
- Herbs (rosemary, thyme)
- Frying oil
- 1 glass broth

Wash the pork loin, pat it dry, and cut along its length to create a prune pocket. With this step, it is crucial not to cut the meat all the way through.
Stuff the prunes into the notch in the pork loin. Don't worry if you think there are too many - they are what will give the meat its unique flavor and juiciness.
Rub the meat on all sides with herbs, paprika, grated garlic, salt and pepper. Allow to rest for 30 minutes so that the spices are well absorbed.
Heat oil in a frying pan and fry the pork on all sides until golden. Remember that proper frying of the meat is important for its flavor and juiciness.
Transfer the fried pork to a pot, add broth and stew for about 1.5h on low heat covered.
After this time the pork should be ready. Leave it in the pot for 10 minutes, remembering to turn off the stove.
Now you can serve your tasty and juicy pork loin with plum. It tastes great with buckwheat groats or potatoes and salad.
