Old Fashioned Canned Cherries in Brandy

- 350 g crystal sugar
- 1 l brandy

Start by carefully washing and drying the cherries. Ensure the cherries are completely dry; any water can spoil the taste and texture.
Here's a tip from my kitchen to yours: Always leave the stalks on the cherries as it helps to preserve them longer. Also, don't bother with pitting the cherries. The little surprise of the pit adds to the whole experience.
In a large jar, put a layer of cherries followed by a layer of sugar. Continue with this layering till all the cherries and sugar are used up.
Slit open the vanilla pod lengthwise and toss it into the jar to give a beautiful, subtle aroma and flavor to your cherries.
Now, pour the Brandy into the jar till the cherries are completely submerged. The trick is to fill it to the brim so the cherries don't get exposed to air and start to ferment.
Once the Brandy is in, tightly seal the jar. Store in a cool dark place for 4-6 weeks. The patience is worth it. The wait allows the Brandy to extract the cherry flavors, while the cherries absorb the Brandy.
After the cherries have steeped, you may enjoy them straight from the jar as a dessert topping or side for a fancy dinner. Always serve chilled!
