Kohlrabi Soup with Egg
A simple and delicious kohlrabi soup with egg for lunch or dinner, which is ideal for warm and cold days.
Ingredients
- 2 piece kohlrabi
- 1 piece onion
- Parsley leaves
- 11⁄2 l vegetable broth
- 2 piece egg
- 2 clove garlic
- 2 tablespoon oil
- 1 teaspoon salt
- 1⁄2 teaspoon ground black pepper

Directions
Heat the oil in the pan and sauté finely chopped onion and garlic until golden brown.
Add chopped or grated kohlrabi and continue sautéing for another 5 minutes.
Then pour in the vegetable broth and let the soup simmer over medium heat for about 20 minutes.
Add spices to taste.
Finally, pour the beaten egg into the soup and cook it for a few more minutes.
We remove the kale soup from the heat and serve it with parsley sprigs.
