Japanese soba salad recipe

Ingredients
Salad
- 350 g Japanese soba noodles
- 21⁄2 tablespoon sesame seeds
- 1 medium salad cucumber
- 1 carrot
- 1⁄2 paprika
- 2 spring onions
Dressing
- 1 clove garlic
- 1⁄4 Cup low-sodium soy sauce
- 1⁄4 Cup rice vinegar
- 1 spoon grated fresh ginger
- 1 tablespoon sesame or sesame seed oil
- 2 tablespoon grapeseed or vegetable oil
- salt
- ground black pepper

Directions
Crush the garlic clove with a knife and chop finely. Add a pinch of salt and mash into a paste with the back of a spoon.
Put the soy sauce, vinegar, crushed garlic, ginger, pepper and sesame oil in a bowl. Mix well. Add the grapeseed or vegetable oil in a thin stream while whisking constantly.
Prepare the soba noodles. Strain and wash under cold water. Place in a bowl.
Put the sesame seeds in a dry frying pan and toast them for a few minutes until they start to brown.
Cut the carrot in two and shave off thin slices with a vegetable peeler.
Add the slices to the bowl with the noodles along with the cucumber, pepper, spring onions and toasted sesame seeds.
Pour the dressing into the bowl and mix well. Serve and enjoy.
