Indonesian Turmeric Yellow Rice Nasi Kuning
Nasi Kuning is a savory and flavorful Indonesian rice dish cooked with turmeric and coconut milk. Usually associated with festivities and celebrations, this vibrant yellow-colored dish is perfect for spicing up your meals or for inviting guests over.
Ingredients
- 2 cups of long grain rice
- 3 cups of coconut milk
- 1 tablespoon of turmeric powder
- 2 bay leaves
- 2 lemongrass, bruised
- 2 kaffir lime leaves
- 1 shallot, finely chopped
- 2 cloves of garlic, finely chopped
- salt to taste

Directions
Rinse the rice thoroughly under cold running water until the water runs clear. Drain well.
Add the coconut milk, turmeric powder, lemongrass, kaffir lime leaves, bay leaves, and a pinch of salt into a large pot.
Mix in the finely chopped shallot and garlic.
Add the rice to the pot and stir until all the grains are coated with the coconut milk mixture.
Bring the mixture to a boil over medium heat.
Once boiling, reduce the heat to low and let it simmer, covered, for about 20 minutes until the rice is tender.
Remove the pot from the heat and let it sit for another 5 minutes with the lid on.
After that, stir the rice gently to fluff it up and ensure even distribution of turmeric color.
