How to make Basic Dutch Mini Pancakes Poffertjes
Dutch mini pancakes, or Poffertjes as they're also known are yummy little cloud-like pancakes that are a Dutch favorite. They are cooked using a special poffertje pan and are usually served warm with a sprinkle of powdered sugar and alongside a knob of butter. Ideal as a breakfast treat or a delightful afternoon snack.
Ingredients
- 1⁄2 Cup whole milk
- 1⁄4 Cup warm water
- 1 teaspoon sugar
- 1 Cup all-purpose flour
- A pinch of salt
- 1 egg
- 2 tbls unsalted butter, melted plus more for the pan
- Powdered sugar, for dusting

Directions
In a small bowl, combine the warm water and sugar, stirring until sugar is dissolved. Sprinkle the yeast over the water and let stand for 5 minutes to allow it to activate.
In a separate larger bowl, combine the flour and salt.
Beat the egg into the milk and then pour this into the flour mixture. Add the yeast mixture and melted butter to the bowl and mix until it forms a smooth batter. Cover the bowl with a towel and set it aside in a warm place for 30 minutes.
Preheat your Poffertjes pan over medium heat and brush each dimple with melted butter.
Fill each dimple of the preheated Poffertje pan to the top with batter. Allow the Poffertjes to cook until bubbles appear on the surface, around 3 minutes.
Flip each mini pancake using a skewer or fork and cook the other side until golden brown, about 1 to 2 minutes.
Remove the Poffertjes from the pan and keep them warm while you cook the remaining batter.
Serve your Dutch mini pancakes warm, sprinkled with powdered sugar.
