How to cook Authentic Japanese Sushi Rice
Sushi rice is the essential base for making sushi rolls. This recipe will guide you on how to make the perfect sushi rice, with its distinct sticky texture and delicate flavor.

- 2 cups sushi rice short grain Japanese rice
- 2 cups water
- 1⁄4 Cup rice vinegar
- 2 tbls sugar
- 1 teaspoon salt

Rinse the sushi rice in cold water until the water runs clear. This step is important to remove excess starch.
Place the rinsed rice and water in a rice cooker or pot. If using a pot, bring it to a boil over medium heat, then reduce the heat to low and simmer for about 15-20 minutes or until the rice is cooked and tender.
In a small saucepan, combine the rice vinegar, sugar, and salt. Heat the mixture over low heat until the sugar and salt dissolve completely. Remove from heat and let it cool down.
Once the rice is cooked, transfer it to a large bowl and let it cool for 10 minutes. While still warm, pour the vinegar mixture over the rice.
With a wooden spatula or rice paddle, gently fold and mix the vinegar mixture in. Be careful not to squash the rice grains, as a fluffy texture is desired.
Continue to mix the rice until it reaches room temperature. This will take approximately 10-15 minutes.
Cover the bowl with a damp cloth to prevent the rice from drying out before using it for sushi rolls.
