Ingredients
egg yolks
- 90 g pumpkin
- ml unsweetened soy beverage./4 tsp cornstarch
- 1 tablespoon Extra Virgin Olive Oil
- 0.125 spoon agar agar powder
- 0.125 spoon black salt
egg whites
- 125 g silken tofu
- 1 tablespoon maize starch
- 1⁄2 spoon black salt
- 20 ml unsweetened soy beverage

Clean the pumpkin of skin and seeds, cut it into small cubes and steam for 10 minutes to make it completely tender.

Blend with the rest of the yolk ingredients in a blender until a very fine and smooth cream is obtained. Bring this cream to a boil in a small saucepan, stirring constantly.

Place the cream in cake pop moulds to cool in this form. Leave the yolks to cool for at least 30 minutes in the fridge.

Mash all the egg white ingredients together with a blender until the mixture is fine.

Heat a large frying pan with olive oil and add 3 tablespoons of the mixture. Place one of the egg yolks in the centre or on one side of the egg white and cover the pan. Cook over medium-low heat.
