Homemade Pikelets recipe
In Australia and New Zealand, small pancakes (about 75 mm in diameter) known as Pikelets are also eaten. They are traditionally served with jam or whipped cream, or just butter, at afternoon tea, but can also be served at morning tea.

- 200 g self-rising flour
- 2 egg
- 325 ml milk
- 70 g unsalted butter
- 15 g of baking powder
- 1⁄2 teaspoon vanilla
- salt

1. Step
In a bowl put the milk, eggs, melted butter, vanilla, baking powder and a pinch of salt.
2. Step
Whisk until you obtain a fine mixture without lumps.
3. Step
In a hot frying pan, with a spoon make the shape of the pikelets.
4. Step
Cook for less than a minute and they will start to bubble on top.
5. Step
Turn over with a spatula and let them toast on the other side.
6. Step
Repeat the same procedure with the whole mixture.
7. Step
Serve with honey or syrup and butter. You can also use toppings of your choice. Enjoy!
