Homemade German Spaetzle Noodles

Ingredients
Spaetzle
- 250 g flour
- 5 eggs
- 1 tablespoon neutral oil
- 1 pinch salt
Roasted breadcrumbs
- 50 g butter
- 100 g breadcrumbs
- 1 pinch salt
- pepper
- 1 pinch nutmeg

Directions
Begin by whisking the eggs until they become foamy. Gradually incorporate the flour, oil, and salt while continuing to mix until the dough is smooth.

Allow the dough to rest for a minimum of half an hour. Once rested, beat the dough once again until air bubbles begin to form.

In a large pot of boiling, salted water, use a spaetzle press to transfer the dough into the pot. Allow the spaetzle to boil for approximately 1-2 minutes, or until it rises to the top of the water.

Using a slotted spoon, remove the spaetzle from the water.

To make the roasted breadcrumbs, melt the butter in a pan and then stir in the breadcrumbs until they turn golden brown.
