Directions
Make the garlic and herb butter: combine softened butter, garlic, parsley, dill, and a pinch of salt. Mix until well combined.
Spread out chicken breasts on a clean surface. Season both sides with salt and pepper.
Place a spoonful of the butter mixture on each flattened chicken breast. Roll the chicken carefully around the butter, pressing firmly. Use toothpicks to secure if necessary.
Set up three separate bowls for the coating. One with flour, one with a beaten egg, and one with breadcrumbs.
Roll each chicken roll in the flour, then drench it in the egg mixture, and finally coat it with breadcrumbs. Make sure the chicken is fully coated.
Chill the breaded chicken in the fridge for a minimum of 30 minutes. This sets the crust and helps the chicken to retain its shape.
Heat oil in a frying pan over medium heat. Add the chicken rolls and cook until golden-brown on all sides. It takes about 10 minutes total.
After frying, bake the chicken in a preheated oven at 200°C (390°F) for 20 minutes, or until chicken is cooked through.
Let the Chicken Kiev sit for a few minutes before serving to allow the juices to redistribute. Remove toothpicks, if used, and serve with your favorite side dish.
