Healthy Sautéed Spinach
This is a recipe I learned from my grandmother. It always amazed me how, with so few ingredients, she could bring out so much flavor in spinach. She used to serve the sautéed spinach with a nice piece of freshly baked homemade bread. Today, I still prepare this recipe for my family and it is always a hit.

- 1 kg of fresh spinach
- 2 cdas of olive oil
- salt to taste
- Pepper to taste

Wash spinach thoroughly to remove all traces of soil. My grandparents always insisted on the importance of thoroughly washing vegetables. This not only ensures that they are clean, but also improves their flavor.
Peel and finely chop the garlic. You can use a garlic press to achieve a more intense flavor.
Heat the olive oil in a large skillet over medium heat. Make sure the pan is hot before adding the garlic so that it browns quickly and does not burn.
Add the garlic and sauté for a couple of minutes until golden brown. This will give the spinach a delicious and aromatic flavor.
Add the spinach, salt and pepper. My advice is to add the spinach a little at a time, as its volume will decrease considerably as it cooks.
Stir the spinach frequently so that it cooks evenly.
Cook until spinach is tender, which should take about 5-7 minutes. If you like it crispier, cook a little less; if you like it softer, cook a little longer.
Serve your sautéed spinach hot. You can sprinkle a little lemon on top to give it a citrus touch, it goes very well with the flavor of the garlic and olive oil.
