Halloween muffin
This recipe will really liven up the Halloween atmosphere at home! Not only the kids, but the adults will love it too.
Ingredients
- 1 cup Pureed pumpkin
- 1⁄2 cup oil
- 1⁄4 cup water
- 1 cup sugar
- 2 egg
- 2 cups flour
- 2 teaspoon baking powder
- 1⁄2 Teaspoon baking soda
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon ground cloves
- 1⁄4 teaspoon salt
- 12 pc Pumpkin shaped sugar or fondant for decoration (can be omitted)

Preheat the oven to 180°C. Prepare 12 muffin tins lined with muffin paper. Always place the muffin tin in the oven in advance to reach the right temperature.
Mix the pumpkin puree, oil, water, sugar and eggs in a large bowl. It's a great advantage if you can use a hand mixer, as it allows you to mix the ingredients together more efficiently and uniformly.
In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Mix the ingredients until they are evenly combined.
Slowly add the wet ingredients mixed in the previous step to the dry ingredients and mix. It's important not to overmix the dough, as the end result may be too thick.
Spoon the batter into the muffin tin. Make sure to fill the paper muffin tins only 3/4 full, so that the muffins have room to rise during baking.
Bake the muffins in the preheated oven for 20-25 minutes, or until golden brown. The exact baking time can vary greatly depending on your oven, so I recommend keeping an eye on your muffins the first time.
Once the cupcakes have cooled, you can decorate them with pumpkin-shaped sugar or fondant for the perfect Halloween atmosphere. Or you can leave this out, the cupcakes will still be delicious.
