Easy Summer Pasta with Zucchini
Pasta with Zucchini is a delectable and healthy meal that amalgamates the rich flavors of sautéed zucchini with the comfort of pasta. Topped with a hint of Parmesan, this is a quick and delicious dinner, perfect for a midweek meal or for a busy weekend.
Ingredients
- 2 medium zucchini, sliced into thin rounds
- 500 g pasta of your choice (spaghetti, penne etc.)
- 2 cloves garlic, minced
- 2 tbls olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
- A pinch of crushed red pepper flakes (optional)
- Grated Parmesan cheese for topping
- Fresh basil leaves for garnish

Directions
In a large pot of boiling salted water, cook pasta according to package instructions. Drain and set aside.
Meanwhile, heat the olive oil in a large skillet over medium heat.
Add the garlic and sauté until fragrant.
Add the sliced zucchini into the skillet. Sprinkle with salt and pepper, and sauté until the zucchini is tender.
Then sprinkle the crushed red pepper flakes and stir for another minute.
Toss the cooked pasta into the skillet with the prepared zucchini.
Serve hot, garnished with freshly grated Parmesan and fresh basil leaves.
