- 500 g pumpkin
- 400 g cooked chickpeas
- 4 tablespoon olive oil
- 1 tablespoon rose harissa
- 1 teaspoon mustard
- 1⁄2 lemon juice
- 1 tablespoon white balsamic vinegar
- 100 g baby spinach
- 100 g feta
- salt
- ground black pepper
- 2 tablespoon toasted pumpkin seeds

1. Step
Preheat oven to 180 degrees Celsius. Cut your pumpkin into wedges and put them in a baking tray. Add chickpeas, 1 tbsp olive oil, a pinch of salt, and harissa paste. Mix it up and roast for 25 minutes.

Mix the mustard, lemon juice, vinegar, 3 tbsp olive oil, and a pinch of salt to make the dressing. Add spinach, mix around a bit, then put the spinach on separate plates.
