- 1 Cup water
- 3⁄4 Cup sugar
- 1 Cup dates
- 1 teaspoon baking soda
- 1 tablespoon butter
- 13⁄4 cups Self Raising Flour
- 1 egg
- pinch of salt
- 2 tablespoon fine desiccated coconut
Optional toppings
- 3⁄4 Cup walnuts
- 1⁄4 Cup dates

In a saucepan, combine water, sugar, dates, baking soda, and butter. Stir until the mixture boils. Remove from heat and let it cool for a few minutes.

In a separate bowl, mix the beaten egg with the flour. Then add the date mixture and stir to combine. Add the salt and coconut, and mix until just combined.

Preheat your oven to 180°C and line a loaf tin with parchment paper or lightly spray with oil. Pour the mixture into the prepared cake tin. If desired, sprinkle the optional toppings over the batter.

Bake for approximately 45 minutes or until cooked. Check the loaf halfway through and rotate it if needed. Once cooked, please remove it from the oven and let it cool.
