Directions
Peel and finely dice the ginger and garlic. Slice the chillies into thin rings and place everything together in the same bowl.
Remove the coriander leaves and then finely chop the coriander stalks. Then, add them to the bowl.
In a separate bowl, mix all the sauce ingredients together.
Cut the meat into thin strips and place them in a mixing bowl. Add the marinade ingredients and coat the meat.
Set up a large mixing bowl with cornflour seasoned with salt and pepper and add the marinated beef. Rub flour into the meat until fully coated.
Remove the flour excess and fry in hot oil until golden brown for 3 minutes. If you want, you can double-fry it.
Remove the pieces carefully with a slotted spoon and drain well on a plate covered with kitchen paper.
In a clean wok, heat a dash of vegetable oil over high heat. Add the ginger, garlic, chilli, and coriander, lower the heat to medium and stir-fry for 30 seconds until fragrant.
Pour over the sauce mixture and bring to a vigorous boil, then add the crispy meat and give the wok two or three tosses to mix everything together.
Spoon into a serving bowl. Serve and enjoy!
