Easy and tasty Pool party cake recipe

Ingredients
Lemon Ganache
- 250 ml heavy cream
- 500 g chopped white chocolate
- lemon essence
Cake batter
- 250 g butter
- 400 g self-rising flour
- salt
- 200 g sugar
- 1 package vanilla sugar
- Lemon zest
- lemon juice
- 250 ml milk
- 1 package baking soda
- 3 egg
Decoration
- 1000 g fondant
- 1 packing Berry blue jelly
- lemon icing
- Food colouring

Directions
Pour the chopped white chocolate over the boiled cream for 5 minutes. Add the lemon essence and stir. Let it rest for 3 hours in the fridge.
Stir the soft butter with the grated lemon zest, the sugar and the vanilla sugar until creamy.
Add the eggs and stir well into the mixture.
Mix the flour with baking powder and salt. Then, add them to the butter-egg mixture. Also, add fresh lemon juice and milk. Mix until obtaining a dough.
Fill two baking pans with the dough, each 24 cm in diameter, and bake at 170°C for 30 minutes.
Make the blue jelly. Cover with aluminium foil and let cool down at room temperature for a few hours.
When the cake has cooled down, cover them with the ganache. Then, place them for 15 minutes in the fridge.
Use a spoon to hollow out the cake which will be the jelly pool. Fill the opening with ganache.
Roll the white fondant over the surface of the cake. Decorate the edge of the cake with blue fondant.
Place the jelly into the cake. Make with fondant the decoration shapes of your preference.
Before serving, place the cake for 1 hour in the fridge. Enjoy!
