Directions
In a large saucepan, melt the sugar over medium heat, stirring constantly. The sugar will form clumps, but will eventually melt completely. Continue stirring until the sugar becomes a thick, liquid amber. This is where you need to be careful, cooking sugar can be dangerous if not handled correctly, always keep children away from this part of the process.
Once the sugar is ready, add the butter. Be very careful at this step, the mixture will bubble violently! Keep stirring until the butter is completely melted, about 2-3 minutes.
Then, slowly add the heavy cream, while continuing to stir. Again, be careful, as the mixture will bubble vigorously.
Let the mixture boil for 1 minute. Then, remove the pan from the heat and mix in the sea salt.
Finally, pour the caramel into a heat-resistant container and wait for it to cool before using. If stored in an airtight container, this caramel can last up to 2 weeks.
The trick in preparing the caramel is patience. The process of melting the sugar can be a bit long, but I assure you that the end result is worth it.
