Crispy Pork Belly Bites

Ingredients
- 2 lbs of pork belly
- 2 tablespoon of olive oil
- 2 tablespoon of brown sugar
- 2 tablespoon of Apple Cider Vinegar
- 2 cloves of garlic (minced)
- salt and pepper to taste
- 2 tablespoon of honey
- 1 tablespoon of red chili flakes (can adjust according to taste)

Start by preheating the oven to 325°F (165°C). This ensures your oven is at the correct temperature when it's time to put the pork belly in.
Rinely dice your pork belly into 1-inch cubes. It's important to make them uniform in size for even roasting.
Lay your pork belly cubes on a roasting tray, ensuring they’re evenly spaced apart. From experience, this step is crucial to give them space to roast and become crispy instead of steaming.
Mix together the olive oil, brown sugar, apple cider vinegar, garlic, salt, and pepper in a separate bowl. This will become the marinade for your pork belly.
Drizzle the marinade over the pork belly, ensuring every piece is adequately coated. This gives that burst of savoury-sweet flavor on every bite.
Roast your pork belly in the preheated oven for about 2 hours, or until it becomes tender and crisp.
