- 1 pumpkin
- 2 tablespoon oil
- 4 cloves garlic
- 1 large sweet onion, chopped
- 4 cups vegetable broth
- 1 teaspoon sage
- 1 teaspoon dried thyme
- 1 Cup heavy cream
- salt and pepper to taste

Scoop out the flesh from the pumpkin skin. Heat oil and add minced garlic and chopped onion. Cook for 5 minutes. Add the pumpkin.
Add broth, sage, and thyme. Heat for about 10-15 minutes or until the pumpkin is fully cooked and the flavors have merged together.
Puree till smooth .
Return the soup to the pot and add heavy cream. Cook until heated through.
