In a medium bowl, combine the grated Gruyère and Emmentaler cheeses.
In a separate saucepan, heat the wine and lemon juice over medium heat until hot, but not boiling.
Gradually add the cheese mixture to the saucepan, stirring constantly until melted and smooth.
In a small bowl, dissolve the cornstarch in kirsch, and add it to the cheese mixture. Stir well to combine.
Season with freshly ground black pepper and nutmeg, adjusting according to taste.
Move the fondue pot to a fondue burner and adjust the heat to maintain a gentle simmer.
Arrange the baguette cubes, vegetables, and apple slices on a platter for dipping.
