- 2 slices bacon
- 1 onion
- 1 stalk celery
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1⁄2 teaspoon dried thyme
- 1⁄4 teaspoon ground black pepper
- 3 cups chicken broth
- 4 potatoes
- 3 cups sweet corn
- 2 boneless skinless chicken breasts
- 1 Cup cream
- 2 tablespoon maize starch

1. Step
Cook bacon in a pot till brown. Add onion and celery, and cook till the onion is brown. Add garlic, salt, thyme, and pepper, and cook for a minute. Pour in the broth.
2. Step
Add diced potatoes, chicken, and corn. Bring to a simmer and cook for 15-20 minutes.
3. Step
Remove the chicken and shred, then add back to the soup and mix. Add cream and cornstarch, and mix till thickened.
4. Step
Serve with grated cheese and green onion, and enjoy!
