- 150 g ginger
- 10 star anise
- 4 cinnamon quills
- 4 pods cardamon
- cloves tbsp coriander seeds
- 11⁄2 kg beef brisket
- 1 kg beef bones
- 1 kg bone marrow
- 31⁄2 l water
- 1 tablespoon white sugar
- 1 tablespoon salt
- 40 ml fish sauce
- 50 g dried rice sticks
- 30 g beef tenderloin
- 4 slices brisket

1. Step
Cook onion and ginger till charred. Toast spices for 3 minutes. Boil brisket and bones for 5 minutes.
2. Step
Bring water to a boil, and add bones, brisket, spices, onion, ginger, sugar, and salt. Simmer for 3 hours. Remove brisket and cook remaining soup for 40 minutes.
