Sardines in tomato sauce is a flavorful seafood dish with a Mediterranean flair. Fresh sardines are slow-cooked in a simmering tomato sauce with garlic, chili peppers, and a hint of lemon. It's a simple, hearty, and delicious meal perfect for a weeknight dinner.
Ingredients
- 8 fresh sardines
- 2 tablespoon of olive oil
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1 can diced tomatoes
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 pinch of ground black pepper
- 1 chili pepper, finely chopped (optional)
- 1 tablespoon of fresh basil, chopped
- 1 lemon, zested and juiced

Clean the sardines and pat dry with a paper towel.
Heat the olive oil in a large skillet over medium heat. Sauté the onion and garlic until the onion becomes translucent.
Add the diced tomatoes, sugar, salt, black pepper, and chili pepper to the skillet. Stir to combine the ingredients.
Lay the sardines on top of the tomato mixture. Cover the skillet and simmer over low heat for about 10 minutes, until the sardines are cooked through.
Sprinkle the chopped basil, lemon zest, and lemon juice over the sardines.
Serve the sardines in tomato sauce over pasta or rice, or with crusty bread on the side.
