Best Mexican Chicken Quesadillas
These cheesy chicken quesadillas are quick, easy, and filled with delicious flavors. With tender chicken, melted cheese and a crispy tortilla, this Mexican-inspired dish is perfect for any meal. Serve with salsa, guacamole, or cream for a fantastic appetizer or course.
Ingredients
- 2 boneless, skinless chicken, cooked and shredded
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- salt and pepper to taste
- 8 tortillas
- 2 cups shredded Mexican blend cheese
- Optional toppings: salsa, guacamole sour cream chopped fresh cilantro

In a large skillet, heat the olive oil. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 2-3 minutes.
Add the cooked and shredded chicken to the skillet, along with the ground cumin, chili powder, salt, and pepper. Stir well to coat the chicken with the spices. Cook for an additional 2-3 minutes until heated through. Remove from heat and aside.
Preheat a clean skillet or griddle over medium-high heat.
Place one tortilla on the skillet and sprinkle with a handful of shredded cheese. Add a generous portion of the chicken mixture on top of the cheese. Place another tortilla on top to create a sandwich.
Cook the quesadilla for 2-3 minutes on each side, or until the cheese melts and the tortillas are golden.
Remove quesadilla from the skillet and repeat process.
7 Once all quesadillas are cooked, serve hot with salsa, guacamole, cream, and chopped fresh cilantro.
