Best Ever Basic Macaroni Salad
This Macaroni Salad is an excellent side dish to have on warm and sunny picnics or family barbecues.
Ingredients
- 2 cups elbow macaroni
- 1⁄2 Cup mayonnaise
- 1⁄2 Cup sour cream
- 1 tablespoon white vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- salt and pepper to taste
- 1⁄2 Cup finely diced red bell pepper
- 1⁄2 Cup finely diced celery
- 1⁄2 Cup grated carrot
- 1⁄4 Cup diced red onion
- 2 tbls Freshly Chopped Parsley

Bring a large pot of salted water to boil. Add the macaroni and cook until tender, usually about 8-10 minutes. But always taste test to make sure- overcooked macaroni can ruin the dish. Once done, drain and rinse under cold water. This stops the cooking process and keeps the macaroni firm.
While the macaroni is cooking, prepare your dressing. In a large bowl combine the mayonnaise, sour cream, vinegar, mustard, sugar, salt and pepper. Mixing the dressing in a separate bowl ensures a thorough and even spread of flavors.
Now, to this dressing add the diced bell pepper, celery, carrot, red onion and parsley. The key to a great macaroni salad is an equal balance of these crunchy veggies, they add freshness and break the monotony of the macaroni.
Once the macaroni is rinsed and drained, add it to the bowl with the veggies and dressing. Stir well to ensure every piece of macaroni is coated with the dressing. The creamy texture you get here comes from properly mixing it.
