Baked courgette with potatoes

Baked zucchini with potatoes - this is an easy and delicious dish that is my favourite choice when I need to prepare a healthy dinner quickly. I also like to make this as a side dish for meat dishes.

  • 2 cloves garlic Added to
  • 2 tablespoon olive oil Added to
  • Salt and freshly ground black pepper Added to

1. Step

Preheat the oven to 200 degrees Celsius. Rinse the potatoes and zucchini, pat dry and cut into thin slices or marigolds. Peel the garlic cloves and slice thinly.

2. Step

Toss the potatoes, zucchini and garlic in a bowl with olive oil, salt, pepper, basil and oregano to coat all the slices evenly.

3. Step

Spread the vegetables on a baking tray and roast in the oven for 25 - 30 minutes, or until the potatoes are soft and golden brown. Stir from time to time to evenly roast the potatoes and zucchini.
