  • 2 finely chopped garlic cloves Added to
  • 1 finely chopped red chilli Added to
  • 100 g bean sprouts Added to
  • 2 chopped green onions Added to
  • 2 Eggs (vegan version: use scrambled tofu or chickpea flour Added to
  • 2 tbls of oil Added to
  • 2 tbls of sugar Added to
  • 3 tbls of Fish sauce (vegan version: use soy sauce or tamari) Added to
  • 112 tbls of Tamarind Paste Added to
  • 1 lime Added to
  • 50 g Crushed peanuts Added to
  • handful of fresh cilantro Added to

1. Step

Soak the rice noodles in warm water as per the instructions on the packet.

2. Step

While the noodles are soaking, fry tofu in a pan with a tablespoon of oil until it is golden and crispy. Set aside.

3. Step

Heat the remaining oil in a wok or large frying pan. Sauté garlic and chilli.

4. Step

Add the eggs and scramble them quickly. (Or add your vegan alternative)

5. Step

Drain the soaking (now softened) noodles and add to your pan. Fry for a minute.

6. Step

Stir in the sugar, fish sauce (or vegan alternatives), and tamarind paste. Mix well until noodles are well coated.

7. Step

Add tofu, bean sprouts, and green onions. Stir fry for another 2-3 minutes.

8. Step

Serve hot, each serving garnished with crushed peanuts, a wedge of lime and a sprinkle of fresh cilantro.
