Directions
Begin by scrubbing the oranges and zesting them. You can use a peeler to get big strips of zest, making sure to avoid the white pith as much as possible.
Now squeeze out the juice from the oranges.
Take a saucepan, add the orange zest, orange juice, sugar, and water to it.
Boil the mixture and then lower the heat to let it simmer for about 20 minutes, allowing the sugar to dissolve completely.
After 20 minutes, strain the mixture into a bowl through a sieve, capturing the liquid and leaving behind the zest.
Add a pinch of salt to the cordial, mix it properly, and let it cool.
Pour the cooled cordial into a sterilized bottle and store it in the fridge.
When serving, add one part of cordial to four parts of water, or adjust according to your taste.
