Directions
Start by combining the all-purpose flour, whole meal flour, sugar, baking powder, baking soda, and salt in a large bowl. Sift them well to avoid any lumps. One tip I learned from my years of pancake making is that you should not over mix the batter. This will keep your flapjacks tender and light.
Next, in another bowl, whisk together the buttermilk and eggs until they blend well. Now, add the melted butter to this mix in a steady stream while whisking constantly to ensure the butter gets incorporated smoothly.
Gradually add the liquid mixture to the dry ingredients. Mix it just enough to combine, remember, it's ok to have lumps in the batter. Allow the batter to rest for a couple of minutes. In the meantime, preheat a large, non-stick skillet or griddle over medium heat.
Pour a 1/4 cup of batter for each pancake onto the skillet. An important piece of advice I'd like to give is to not flip the pancakes until they start to bubble on top and the edges start to look set. This will give them a nice, even golden-brown color while keeping the inside perfectly cooked.
Finally, serve your delicious Flapjack Pancakes with a drizzle of pure Maple syrup. Enjoy this fluffy and tasty delight!
