Vegan Spicy Arrabbiata Fluffy Gnocchi

Ingredients
- 500 g of vegan gnocchi
- 1 tablespoon of olive oil
- 5 cloves of garlic, minced
- 1 Red Chili, finely chopped
- 1 small red onion, finely chopped
- 1 can of diced tomatoes
- 1 teaspoon of salt
- 1⁄2 teaspoon of ground black pepper
- A handful of Parsley, chopped
- Vegan Parmesan Cheese (optional)

Heat the olive oil over medium heat in a large frying pan. Add the chopped red onion, minced garlic, and diced red chili. Sauté for 2-3 minutes until fragrant and the onions are translucent.
Add the diced tomatoes to the pan, stirring well. Add the salt and black pepper. Allow the sauce to simmer over low heat for about 10 minutes.
Meanwhile, cook the gnocchi according to the package instructions in a large pot of boiling salted water. When they float to the surface, they are done.
Drain the gnocchi, reserving a cup of the cooking water.
Add the cooked gnocchi to the simmering sauce, stirring well to coat all the gnocchi. If needed, add a bit of the reserved cooking water to thin out the sauce.
Simmer for a further 2-3 minutes, then remove from heat.
Sprinkle over the chopped parsley and serve hot. You can also top it with vegan parmesan cheese if desired.
