Ingredients
- 1 can chickpeas, rinsed and drained
- 1⁄4 Cup mayonnaise
- 1 teaspoon Dijon mustard
- 1⁄2 small red onion, finely chopped
- 1 stalk celery, finely chopped
- 2 tbls Chopped fresh parsley
- 1 teaspoon lemon juice
- Salt and freshly ground black pepper, to taste
- 4 slices of bread
- Lettuce, for serving
- Tomato slices, for serving

Directions
In a bowl, mash the chickpeas until they have a chunky texture.
Add the mayonnaise, Dijon mustard, red onion, celery, parsley, and lemon juice to the chickpeas. Mix well until the ingredients are well combined.
Season the chickpea mix with salt and pepper to taste.
Toast the bread slices.
Spread a generous amount of the chickpea mix on one slice of bread. Add lettuce and tomato slices.
Top with the other slice of bread.
Repeat the process for the second sandwich.
Slice the sandwiches in half and serve immediately.
