Traditional Mexican Tres Leches Cake

Ingredients
Cake
- 6 egg
- 200 g sugar
- 2 teaspoon vanilla
- 150 ml milk
- 250 g self-rising flour
- 2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 150 ml heavy cream
- 1 can condensed milk
Topping
- 500 ml heavy cream
- 25 g sugar
- 1 teaspoon vanilla

Directions
Preheat oven to 180 degrees Celsius. Separate the eggs, and beat the yolks with 150 g sugar into cream. Add 1 tsp vanilla, milk, and combine well.
In another bowl, combine the dry ingredients. Add this to the wet mixture.
Beat the egg whites with 50 g sugar into stiff meringue. Add to the batter.
Grease your pan with butter. Pour the batter in. Bake for 30 minutes.

Combine the cream, condensed, and evaporated milk. Add 1 tsp vanilla and mix well.
When the cake is baked, poke the whole surface with a fork. Pour the milk cream on top. Cover with plastic wrap and let sit in the fridge overnight.
