The best homemade vegetable soup recipe
Delicious, nourishing, and easy to prepare at home, vegetable soup is the perfect dish for the winter months and cold days, when there is nothing better than a hot and tasty meal.
Ingredients
- 1 l vegetable or chicken stock or water
- 3 tablespoon olive oil
- 1 onion
- 4 cloves garlic
- 2 carrots
- 350 g cabbage
- 1 leek
- celery
- 2 ripe tomatoes
- 1 potato
- 1 Cup green beans or peas
- 1 Cup of sweet corn
- 1 bay leaf
- salt
- ground black pepper

Directions
Peel and cut the carrots into thick slices.
Peel and cut the potato into cubes. Then, put them in a bowl with water.
Peel and chop the garlic and onion.
Wash and chop the leek into small pieces.
Wash and chop the cabbage and half a piece of celery.
In a saucepan, add the olive oil.
When the oil is warm, add the leek, garlic, and onion. Cook for 3 minutes.
Add the carrot and potato and season with salt and pepper. Cook for 3 minutes.
Add the previously grated ripe tomatoes.
Add the liquid, which can be either water or stock.
Add the cabbage and bay leaf. Then cover the pot and cook for 30 minutes.
Add the peas and sweetcorn. Cover the saucepan and cook another 5 minutes.
Finally, the soup is ready! Wait five minutes before serving.
Add a few drops of lemon juice, serve, garnish with parsley and eat the soup while it is still hot.
