Sweet & Sour Crispy Tofu and Pineapple Stir Fried Rice

Ingredients
- 2 cups of cooked jasmine rice
- 1 Cup of diced firm tofu
- 1 Cup of fresh pineapple chunks
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 red bell pepper, diced
- 3 tbls of soy sauce
- 2 tbls of vegetable oil
- A handful of spring onions, sliced
- salt and pepper to taste

Directions
Begin by heating the vegetable oil in a large wok or frying pan over medium-high heat.
Add the diced tofu to the pan and cook until crispy and golden, stirring occasionally.
Add the diced onion, minced garlic, carrot, and bell pepper to the pan, and stir-fry for around 5 minutes, until the vegetables become tender.
Add the cooked jasmine rice and pineapple chunks, stirring well to combine all of the ingredients. Allow to cook for a few more minutes.
Pour in the soy sauce and season with salt and pepper, stirring well to evenly distribute the seasoning.
Finally, stir in the sliced spring onions before removing the pan from the heat.
Serve the Tofu and Pineapple Fried Rice while it is still hot, and enjoy!
