Roasted beetroot
Roasted beetroot is great as a side dish to a main meal.

- 3 Spoons olive oil

1. Step
Preheat the oven to 200 degrees C.
2. Step
Wash and peel the beets thoroughly.
3. Step
Cut the beetroot into roughly 2 cm pieces.
4. Step
Place the beetroot pieces on a baking tray, drizzle with olive oil and mix thoroughly so that the beetroot is evenly coated with oil. I recommend using baking paper so that the beets don't burn to the baking sheet and come off easily.

Add salt and pepper to taste.
6. Step
Roast in the preheated oven for 30 to 40 minutes, until the beets are soft and golden. It's a good idea to stir the beets occasionally during baking so they cook through evenly.
7. Step
Serve still warm as a side dish.
