Quick & Easy Shrimp Prawn Stir Fry

Ingredients
- 500 g raw prawns, shelled and deveined
- 2 teaspoons vegetable oil
- 1 bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 chili, deseeded and chopped (optional)
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 teaspoons cornstarch mixed in four tablespoons water
- salt and pepper to taste
- Fresh coriander for garnish

Heat oil in a wok or large frying pan over medium-high heat. Add onions, garlic, and chili (if using), and stir fry until fragrant, about a minute.
Add the prawns and cook until they change color to pink.
Take the prawns out leaving the juices behind. Add carrots and bell pepper into the pan and stir-fry until the vegetables start to soften, about 2-3 minutes.
Mix in the soy sauce, oyster sauce, sugar, salt, and pepper. Stir well to combine.
Return the prawns to the wok, add the cornstarch mixture and stir fry until sauce thickens, about 1-2 minutes.
Turn off the heat, sprinkle with fresh coriander and serve immediately for best taste. This dish pairs well with white rice or noodles.
