Quick & Easy Homemade Ricotta Cheese Gnocchi

Ricotta Gnocchi are delicious and light dumplings made from ricotta cheese. They are easier to make and lighter than their traditional potato counterparts. These versatile pillows of goodness can easily take on any flavors you pair with them, from a simple butter and sage sauce to a rich bolognese.

1. Step

Place ricotta in a sieve over a bowl and drain excess liquid for about 10 minutes.

2. Step

In a mixing bowl, combine the drained ricotta, Parmesan, egg, and salt. Mix well to combine.

Gradually add flour, stirring to form a soft, sticky dough.

4. Step

Turn dough out onto a lightly floured surface and knead gently for a minute until it forms a ball.

Divide the dough into 4 pieces. Roll each piece into a 20-inch-long rope (diameter should be about 1 inch).

6. Step

Cut each rope into 1-inch pieces to form gnocchi.

7. Step

Press each gnocchi lightly with the back of a fork (optional) to create ridges.

8. Step

Bring a large pot of salted water to boil. Add gnocchi (in batches if needed) and cook until they float to the surface, about 2 minutes.

9. Step

Using a slotted spoon, transfer gnocchi to a warm dish and drizzle with a sauce of your choice.

10. Step

Serve immediately with extra Parmesan cheese on top.
