Quick & Easy Filipino Pork Vegetable Pinakbet
Pinakbet is a flavorful Filipino dish that's packed with different vegetables, pork, and shrimp paste. It showcases the savory and subtle sweet taste that brings a comforting delight to one's palate. It is usually paired with plain rice and can be served for lunch or dinner.
Ingredients
- 1 lb pork belly, cut into small pieces
- 10 Pieces small bittermelon, cleaned seeds removed and sliced
- 2 medium eggplant, sliced
- 1 medium-sized bitter melon, deseeded and sliced
- 2 medium-sized tomatoes, diced
- 1 medium-sized onion, diced
- 5 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 1⁄2 Cup of shrimp paste (bagoong)
- 1⁄4 Cup of water
- 3 tablespoon vegetable oil
- salt and pepper to taste

Directions
In a large pan, heat the vegetable oil. Add the pork belly and fry until brown. Set aside.
In the same pan with the leftover oil, sauté the onions, tomatoes, garlic, and ginger.
After the vegetables are slightly cooked, add the shrimp paste. Stir to combine well. After 2 minutes, add the fried pork belly.
Stir the pork with the vegetable mixture. Add the bittermelons, eggplants, okras, and string beans. Stir well to mix.
Pour in the water. Cover the pan and let it simmer for around 10-15 minutes. Stir occasionally. Add salt and pepper to taste.
Once the vegetables are done, remove from the heat. Serve hot with a side of plain rice.
