Quick and tasty Passion Fruit Melting Moments
This easy recipe teaches how to make the best homemade Passion Fruit Melting Moments, an authentic biscuit from New Zealander cuisine.
Ingredients
Cookies
- 170 g Softened unsalted butter
- 100 g icing sugar
- 260 g plain flour
- 30 g custard powder or cornflour
- 15 ml passion fruit juice
- 5 ml vanilla essence
- pinch of salt
Icing
- 120 g icing sugar
- 15 ml passion fruit juice

Directions
Preheat the oven to 180 °C. Line a couple of baking trays with parchment paper.
Cream the butter and icing sugar together until light and fluffy.

Add the salt, vanilla extract and passion fruit juice. Mix until ingredients are combined.

Mix the custard powder into the flour and add to the butter mixture. Mix until everything clumps together into a soft dough.

Use a hand to squeeze the mixture into a dough. Then, divide it into 20 equal portions. Roll each portion into a ball and place it onto the baking trays, leaving some space between each. Then, press them with a fork tines, flattening them a little.

Bake the biscuits in the oven for about 16 minutes. Remove them from the oven and leave them to cool for 5 minutes, then transfer them to a wire rack to cool completely.

Mix the remaining passion fruit juice into the icing sugar and stir it to a thick paste.

Turn over half of the biscuits and spoon an equal amount of icing onto each. Then, press another biscuit onto the top of the icing to make a sandwich biscuit.

Leave for just a few minutes to let the icing set firmer. Serve and enjoy!
