Quick and tasty Passion Fruit Melting Moments

- 30 g custard powder or cornflour

- 120 g icing sugar
- 15 ml passion fruit juice

Preheat the oven to 180 °C. Line a couple of baking trays with parchment paper.
Cream the butter and icing sugar together until light and fluffy.

Add the salt, vanilla extract and passion fruit juice. Mix until ingredients are combined.

Mix the custard powder into the flour and add to the butter mixture. Mix until everything clumps together into a soft dough.

Use a hand to squeeze the mixture into a dough. Then, divide it into 20 equal portions. Roll each portion into a ball and place it onto the baking trays, leaving some space between each. Then, press them with a fork tines, flattening them a little.

Bake the biscuits in the oven for about 16 minutes. Remove them from the oven and leave them to cool for 5 minutes, then transfer them to a wire rack to cool completely.
