Quick and easy flathead fillets recipe
This easy recipe teaches how to make the best homemade flathead fillets, a popular dish in Australian cuisine. Don't miss it!
Ingredients
- 100 ml vegetable oil
- 250 g Flathead Fillets
- 35 g salt
- 30 g ground black pepper
- 128 g corn flour
- 30 ml milk

- 35 g coriander
- 20 g parsley
- 2 green chillies
- 10 g ground cumin
- 5 g Ground Cardamom
- 5 g semolina sugar
- 2 g cloves of garlic
- 30 ml olive oil
- 30 ml water

Directions
Cut the crusts off the bread, then dice the slices. Blend them until obtaining breadcrumbs.
To make the zhoug dressing, place the ground cumin into a bowl, along with ground cardamom, garlic cloves, pepper, caster sugar and parsley leaves. Slice the chillies down the middle, then chop them finely and add them in. Drizzle some olive oil and stir until obtaining a nice puree. Then, squeeze half a lemon juice.
Cut the flathead fillets into portions. Dust them with cornflour, then place them into an egg wash and then into the breadcrumbs.
Pour the vegetable oil into a frying pan. Then add the flathead fillets and keep them on the heat until they begin to crisp. Once they are golden all over, remove the excess oil with a paper towel.
Serve on a plate and drizzle the zhoug dressing. Enjoy!
